10 Fun and Healthy Ways to Enjoy Capsicum (That Kids Will Love Too!)

Capsicum, also known as bell pepper, is a versatile and healthy vegetable that can be used in a variety of dishes.

Not only do they add a pop of color to your plate, but they are also low in calories and high in vitamins and antioxidants.

In this blog, we've gathered ten fun and effortless ways to incorporate capsicums into your cooking and get your kids excited about eating healthy! 

 

  1. Rainbow Skewers: Cut capsicum into chunks and alternate with cherry tomatoes, mushrooms, and onions on a skewer. Brush with olive oil and grill until tender. A colorful and tasty side dish or appetizer!

  2. Capsicum and Tomato Bruschetta: Toast slices of crusty bread and top with a mixture of diced capsicum, cherry tomatoes, basil, and balsamic vinegar. A simple and flavorful appetizer or side dish.

  3. Capsicum Salsa: Blend diced capsicum, tomatoes, onion, cilantro, and jalapeño until chunky. Serve with chips or as a topping for tacos or burritos. A flavorful and versatile salsa. 

  4. Pizza Topping: Dice capsicums and use as a topping for homemade pizza, for added crunch and flavor.

  5. Stir fry: Sauté your preferred choice of protein, diced capsicum, and any other veggies you like in a hot wok with ginger and soy sauce. Serve over rice for a quick and healthy meal.

  8. Stuffed capsicums with rice: Cut the tops off of capsicums, remove the seeds, and fill with a mixture of rice, herbs, and spices. Bake until tender and hot. 

  9. Veggie Quesadillas: Spread a tortilla with vegan cream cheese and sprinkle with diced capsicum, onion, and corn. Fold in half and cook until crispy. Serve with salsa and guacamole. An easy and fun lunch or dinner!
  10. As a snack: To get the most out of the nutrition that capsicum offers, you can enjoy it as a snack with hommus dip, just as you would for carrots and celery. Something to consider for the childrens' lunchbox too!
